Shelf life of fresh veggiesSome foods referred to as vegetables are actually fruits, which are distinguished by seeds dispersed in an edible fleshy substance. These so-called vegetables include squash, tomato, cucumber, eggplant, avocado, and pumpkin. 

 

Vegetables are categorized by the part of the plant they represent. Categories and category members include the following:

 

leaves: spinach, lettuce, cabbage

 

stems: asparagus, celery, mushrooms

 

flowers: broccoli, cauliflower

 

seeds: corn, peas, lentils

 

bulbs: onions, garlic, leeks

 

roots: carrots, beets, sweet potatoes

 

tubers: white potatoes, artichokes
