It's hard to match ketchup for versatility or mustard for variety.

 While mustard is usually added to sandwiches, burgers, and hot dogs, some people put ketchup on almost any food, including French fries, eggs, hot cereal, steak, meat loaf, and onions. Mayonnaise is also quite versatile. The French serve it with French fries and hard-boiled eggs.

However, ketchup and mayonnaise are available primarily in only one format (although mayonnaise does have low-fat and fat-free variations and the slightly different Miracle Whip®). Mustard, on the other hand, is available in many quite different variations, including spicy brown, dijon, honey mustard, and classic yellow. Spicy brown is great on deli sandwiches, and classic yellow is perfect for a ballpark hot dog.
