Cakes

The icing on the cake isn’t simply for flavor or decoration. Icing also helps cakes stay fresh by sealing in moisture. This is especially true of heavy, butter-cream-based icings. Once the cake is cut, however, it can quickly grow stale unless it is wrapped and/or stored in the refrigerator.
