Mayonnaise

Many people eat mayonnaise regularly and never wonder what it’s made of.  Others know and are, therefore,  afraid to eat it.  The main ingredients are raw egg yolks (and sometimes also whole raw eggs), oil, vinegar and/or lemon juice, salt, and sometimes additional spices.  The raw eggs are what  make people worry  because they’ve heard  these sometimes contain harmful bacteria. However, commercial mayonnaise is actually a very safe product to eat.  Homemade mayonnaise made with raw, unpasteurized eggs is riskier.
