Ketchup and Mustard

Ketchup and mustard are not only popular condiments, but highly averse to spoilage, owing to their natural acidity, among other factors. The majority of spoilage bacteria tend to thrive in acid-neutral environments rather than high- or low-acid environments. So, no worries if you leave ketchup or mustard sitting out for awhile during summer barbecues.
