Although pasteurization extends its shelf life and makes milk safe to consume, some nutrients are lost during the process, which involves heating the milk to very high temperatures in order to kill microbes. Among the nutrients lost are the enzymes lipase and lactase, which aid in the digestion of fats and lactose, and vitamins C and B6.

 

Nevertheless, milk contains nine essential nutrients, making it one of the most healthful beverages on the market. In addition to calcium, milk is rich in vitamin A, vitamin B,vitamin D, protein, potassium, riboflavins, niacin, and phosphorous.
