Why does packaged lettuce last so much longer than it used to?

The lettuce undergoes a process known as modified atmosphere packaging, which flushes out oxygen and carbon dioxide, both of which contribute to spoilage. Packaging is instead infused with gases such as nitrogen that are beneficial to food, thereby extending its shelf life. As a result, some packaged lettuce has a “use by” date that extends for weeks from the date of purchase.
