What types of wine can be stored for aging?

The majority of wines that age derive from one of three types of grapes: Cabernet Sauvignon, Syrah, or Nebbiolo. Examples of these include red Bordeaux, Hermitage, and Barolo, respectively.
 
Aging simply refers to keeping a wine in dark, cool conditions for an extended period to reduce the wine's acidity and smoothen its flavor.  The compound tannin, which derives principally from the grape's skin, allows wine to age well. In fact, Tannic wines may be unsuitable for consumption when they are young. Over time, the  tannins reduce the acidity of wine, allowing it to age gracefully.
