Is it safe to eat soft cheese warmed to room temperature?

In some cases. In fact, brie, camembert, and other ripened cheeses display more of their natural flavor and texture at room temperature. Leaving ripened soft cheese out for 30-60 minutes prior to serving allows it to reach its optimum temperature.
 
It is not advisable to warm mozzarella, cream cheese, and other unripened soft cheeses to room temperature. Bacteria begin to multiply at temperatures exceeding 40°F.
