Is it okay to stuff a chicken?

Sorry, but  the USDA does not recommend stuffing raw, whole poultry. Purchase of "pre-stuffed" chicken also isn't recommended. The concern is that uncooked ingredients such as eggs, mushrooms, and onions may contain pathogens that can quickly multiply at temperatures between 40°F-140°. Additionally, an over-stuffed bird may result in undercooked meat.
 
Traditionalists wishing to brave it  and stuff anyway should check the temperature to be sure both the whole chicken and its stuffing are cooked to an internal temperature of 165°F.
