How can I tell if hummus has gone bad?

The hummus may puddle as a result of oil separating from other ingredients. This means the hummus is rancid. “Off” odors and flavors also are signs of rancidity. Rancidity can cause nausea, vomiting, and diarrhea.

The hummus also may look moldy, in which case it should be discarded.  It may also appear slimy, another sign of spoilage.
