Why do pre-packaged deli meats last longer than those from the deli counter?

Prepackaged meats undergo a process known as modified atmosphere packaging, which flushes out oxygen and other gases that contribute to spoilage. Packaging is instead infused with gases such as nitrogen that are beneficial to food, thereby extending shelf life.
