What is ultrapasteurized dairy cream?

Ultrapasteurized cream is identical to traditional cream but is heated under pressure at a higher temperature for a shorter period of time-- 280°F for two seconds versus 167°F for 5 seconds. Because ultrapasteurization more efficiently kills microorganisms that cause milk products to sour, the result is extended shelf life, meaning the amount of time products keep under proper storage conditions. Unopened ultrapasteurized dairy  creams may keep for several weeks. Once opened, they should be consumed within a week.
