Is there any risk of illness from eating a jelly sandwich?

Very little. Because jelly, jam, and preservatives  are high in acid and sugar, they do not readily support bacterial growth. They do, however, support the growth of mold and yeast, either as a result of improper storage or proper storage over an extended period of time.  Proper storage eliminates most risk of illness.
