If a potato develops sprouts, will it still be good to eat?

What causes a potato to sprout is humidity over 90%, temperature over 60°F, and light. You can cut off the sprouts as long as you also remove all “green” tissue surrounding the sprouts. This may mean peeling off all the skin, maybe even down a quarter inch. However, the potato may have a bitter taste that burns your mouth because of the solanine produced when the potato begins to grow. If the potato has been stored for a long time, sprouting is the evidence that the potato is beginning to grow. As it does this, the starch stored in the tuber is converted to sugar, making the potato mealy.
