If I take coffee beans out of the freezer to remove some, can I put the rest back in?

Here’s what Talkaboutcoffee.com says, "Once you take your canister or package out of the freezer, don't put it back in. Refreezing your coffee will only dehydrate it and hasten the flavor decay."

 

Food scientist Susan Brewer gives the same advice with a different explanation: “Once coffee is taken out of the freezer, it should never go back in. If you freeze the beans in bulk, every time the container is removed from the freezer and opened, the humidity in the room-temperature air will condense on them. When they are returned to the freezer, the beans absorb the moisture, which also causes degradation.”

 

Moisture in, moisture out. In any event, don’t take a whole bag of beans in and out of the freezer repeatedly. Instead, freeze your coffee beans in small packages that, once removed from the freezer, will stay out and be used immediately or soon.
