How should potatoes be handled prior to cooking?

Since it's possible for potato skins to harbor pathogens from soil or handling, wash potatoes thoroughly prior to cooking them. Wash the potatoes with cool tap water to remove bacteria and surface dirt. If you intend to slice or peel the potatoes, be sure to thoroughly wash your hands with soap and water before doing so, particularly if you've handled other fresh produce or a raw meat product. Wash cutting boards, knives, and other utensils with soapy, hot water both before and after slicing or peeling potatoes.
