How should I handle citrus fruits while preparing to eat or serve them?

Wash the fruits under running water just before cutting or peeling them. This will help eliminate surface bacteria that might otherwise contaminate the underlying flesh.
 
Wash your hands for 20 seconds with warm water and soap before and after preparing citrus fruits. Also wash cutting boards, knives, and other utensils before and after using them.
 
Pat the fruit dry prior to slicing or peeling it.
