How should frozen bread be thawed?

As slowly as possible. Six hours may be required at room temperature and 12 hours in the refrigerator. Make sure to keep bread wrapped while thawing it.
 
You can also thaw frozen bread in the microwave if you are careful. It's easy to ruin a loaf this way because microwaving tends to suck the moisture out of the bread , leaving it crispy, sweaty  and/or rubbery. Be sure to use the defrost setting.
