How should fresh lamb be handled in the store and at home?

Select lamb just before checking out at the register so that it remains cold. It should be wrapped in a disposable plastic bag  to contain any leakage that could cross-contaminate other foods. Take the lamb home immediately and refrigerate it at 40°°F or lower, or freeze it at 0°F or lower.
