How should fresh ham be handled prior to cooking?

Handling is of particular concern with fresh ham. Unlike fully-cooked hams--meaning hams that have been cured, smoked or pre-cooked during processing--fresh ham must be cooked prior to eating. Be sure fresh ham doesn't directly or indirectly contact foods that don't require cooking, such as raw fruit and vegetables. After handling a fresh ham, clean counter tops, plates, and utensils and hands with soap and warm water. Anything used while preparing the fresh ham must be thoroughly washed before it can come in contact with the cooked ham.
