How should chocolate candy or candy bars be stored?

A general rule of thumb is that the harder the candy the longer it will stay fresh at room temperature. Chocolate candy is the exception. Chocolate will keep indefinitely if it is kept at a reasonably cool temperature--below 75°F. Even if it does get a bit warm, melts and resets, it will lose its fat bloom--yellow/white discoloration--if you melt it again for use as an ingredient in cooking. Fact is, chocolate can be melted and re-used many times.
 
If chocolate isn't prepackaged, it should be stored in an airtight container or wrap to maintain creaminess.
