How do dips made from traditional sour cream differ from those made from light and fat-free sour cream?

 
Light sour cream contains about 40% less butterfat than traditional sour cream because it’s made from a mixture of milk and cream rather than cream alone. Non-fat sour cream is made from skim milk. Gelatins and starches are added to it to compensate for the lack of fat.
