How can I tell if a whole potato has gone bad?

A potato that has turned green has been exposed to excessive sunlight and will taste bitter. The green skin is toxic and should be removed and discarded if you choose to eat the potato. Green flesh also should be removed. It would be best to simply discard the potato.

Sprouts indicate that a potato's starch has begun converting to sugar. If the sprouts are accompanied by shrinking and wrinkling, the potato should be discarded. Spoiled potatoes will look discolored and feel soft and mushy. If they aren't discarded, they can accelerate spoilage in other potatoes in the bags. Moldy potatoes also should be discarded.
