Can frozen ice cream spoil?

Because it is stored in a freezer, ice cream won't develop microbial growth. However, ice creams can dehydrate over time, resulting in "freezer burn." In addition to the passage of time, freezer burn can also be the result of improper wrapping or a freezer that’s not cold enough. Also, frost-free freezers can cause lactose crystals to form.

Ice cream doesn't improve with age, and most refrigerator freezers aren't intended for long-term storage of it, so buy it in quantities that you can use within a few months.
