Why does flour have a “best by” date?

Some flours can be stored longer than others; however, millers generally recommend storing for no more than 6 months. The “best buy” date is not about safety; it indicates the last date the manufacturer will stand behind the product’s freshness, quality, and taste as it affects the food in which it is used. The length of time the quality will be retained depends upon the fat content,  how much the  flour has been processed (bleached), and how it is stored. Flour containing the germ has a shorter shelf life than other types of flour because it contains more fat.
