Why do some unopened salsas require refrigeration?

So-called fresh varieties, which can be found in the refrigerated section of supermarkets, don't contain vinegar and other preservatives that prevent bacterial growth at warmer temperatures. These salsas tend to have a shorter shelf life. They often are merchandised in plastic containers.
