What are some of the more common types of salsa?

Common salsas include the following:

  • Salsa roja  (red sauce) is used as a condiment in Mexican and Southwestern cuisine. It is usually made from cooked tomatoes, chili peppers, onion, garlic, and fresh cilantro.
  • Salsa cruda (pico de gallo) is made from raw tomatoes, lime juice, chili peppers, onions, cilantro leaves, and other coarsely chopped raw ingredients.
  • Salsa verde (green sauce) is a Mexican version made from tomatillos,  a small green Mexican fruit that is part of the tomato family. Sauces also include herbs.
  • Salsa taquera (taco sauce)  is made from tomatillos and morita chili.
  • Salsa ranchera (ranch-style sauce) is made from tomatoes, chilies, and spices. Typically served warm, salsa ranchera has a thick, soupy texture. It imparts a flavor reminiscent of black pepper, though it doesn't contain any. 
  • Salsa brava (wild sauce) is a mildly spicy salsa often flavored with paprika.
  • Molé is a Mexican sauce made from chili pepper, spices, unsweetened chocolate, almonds, and other ingredients.
  • Mango is a spicy-sweet sauce made from mangoes and used as a topping for nachos. It  also is used as a garnish on grilled chicken or grilled fish.
