What are lamb chops?

Chops are made from various cuts, with loin and rib chops being the most tender. Less expensive blade and arm chops, which come from the shoulder, and sirloin chops, which are made from the leg, are also tender but aren't as attractive because sections of the meat are separated by bands of connective tissue.
