Is it true that placing bananas in a paper bag will speed up ripening?

It is. Here's why: Most fruits, bananas included, release ethylene during ripening. As it happens, bananas release more ethylene than most fruits. Placing bananas in a paper bag will reduce their exposure to oxygen, thereby accelerating ethylene production. The more ethylene bananas produce, the faster they ripen.
