How should loose and pre-packaged spinach be stored?

Both should be stored in the refrigerator at a temperature of 40°F or a few degrees lower.
 
Pre-packaged spinach should be left in its store wrapping.  Unwrapped spinach needs some wrapping to keep it from drying out.  Wrap it loosely and/or puncture holes in the wrapping.  If vegetables are tightly wrapped so that no oxygen gets at the product, over time, spore-forming bacteria (mostly associated with vegetables that grow in soil) can grow and produce toxins that cause botulism.
