How should beef be handled in the store and when brought home?

To prevent warming, select beef just before checking out.  In the store, the package(s) should be put in disposable plastic to contain any leakage which could cross-contaminate produce or other foods. Raw beef should never be bagged with other products. (Checkers know that, but some consumers try to stuff as much into one bag as possible.) Take the beef home immediately and refrigerate it at 40°F or lower or freeze it at 0° F or lower.
