How does veal differ from other types of beef?

The only difference between veal and other whole-muscle beef is age. Veal comes from cattle slaughtered within 16-18 weeks of birth. The same rules for shelf life, handling, refrigerating, freezing, and cooking apply; bacteria don't discriminate on the basis of age. One noteworthy difference between conventional whole-muscle beef and veal is color. Veal is grayish-pink.  Also, veal  doesn't keep as long when frozen. Frozen veal chops and the like should be consumed within 4-6 months.
