How can I be sure the summer squashes I select are fresh and wholesome?

Select a summer squash that is small and firm. Summer squashes grown to larger sizes develop a thicker skin and become bitter. Summer squashes should be heavy for their size and feature glossy, unblemished skins. Avoid specimens with nicks and bruises Soft, thin skins are also an indicator of freshness and quality. Harder skins, fibrous flesh, and hard seeds are signs of over-mature summer squash. Also avoid soft or translucent specimens.
