Can fresh summer squash be frozen?

Yes. The flesh of summer squash should be diced or grated prior to freezing. Unless you intend to use it for baking, the squash also should be blanched for two minutes. Before freezing, place the squash in a sealable plastic bag and squeeze out excess air to avoid freezer burn. The squash will keep for up to 10 months.
